With WooCommerce active, Product fields can read straight from the product: price, currency, SKU, stock status, average rating, number of ratings and reviews, brand, GTIN and the sale end date. These appear by name in the source selector, so there are no meta keys to look up.
WooCommerce outputs its own Product markup. Two Product blocks on one page send search engines conflicting signals, so only one should be in charge. By default Schema Pro handles products and Woo's own output is switched off — chosen because not every theme actually fires Woo's markup, and no markup at all is worse than two.
You can hand products back to WooCommerce under Tools → WooCommerce. If you do, check a product page's source afterwards and confirm a Product block is present.
