Make a coupon limited to that one product and to 1 item, give it an amount of 0 so its own code is worth nothing, and choose it as the Coupon rules of a Percentage discount prize of 100. The winner adds the product to the cart and their code makes it free. Keep that coupon published: if it goes to the bin, the prize stops being drawn rather than giving 100% off the whole order.
